Shellco began in 1985 on a desolate stretch of Ludlow St. in the Lower East Side and has been in continuous operation for over 30 years.

In the late 90s, original founder Fran Jacobs died suddenly and her right-hand woman, a feisty Israeli named Elinor Ilin took over the business. Some of you remember Fran, many of you knew Elinor.

Elinor continued to provide the local community of caterers and chefs with pastry shells and canape vessels and bite size desserts. From our kitchens on Ludlow St. and Mercer St. and then on East 1st and West 13th, a small but mighty business was humming. 

When we took over in 2008, we had a singular mission- transform a legacy company for the modern age. That meant widening our scope of products; taking on the ever-more grandiose and eccentric culinary ideas of event producers; increasing our territory from Manhattan to the entire tri-state area; and as of 2017, providing daily bread and viennoiserie delivery in the early morning hours.

Back in the day it was only pastry shells- but the simple, useful concept of handmade-to-order pastry shells was enough to catapult Shellco onto the steps of the giants. We are proud to count the best, the biggest, the oldest and most iconic of professional kitchens among our clients. We are equally proud of those one-man and one-woman operations working out of matchbox kitchens and tirelessly putting on the show.
