Shellco began in 1985 on a desolate stretch of Ludlow St. in the Lower East Side. We have been in continuous operation for over 30 years.
In the 90s, the original owner Fran Jacobs died, and the business went to her right-hand woman Elinor Ilin. Some of you remember Fran, many of you knew Elinor.
Elinor continued to make pastry shells and bite-size desserts for caterers and chefs. From our kitchens on Ludlow St. and Mercer St., and then on East 1st and West 13th, a small but mighty business was humming. Always, the artisan bakers one step ahead of high-rent development sprouting up in the city around us.
When we took over in 2008, we had a singular mission- transform this legacy company for the modern age. We increased our scope of products. We widened our territory to the entire Tri-State area. And, in 2016, we began daily deliveries of bread and viennoiserie in the early morning hours.
Back in the day, it was only pastry shells. But the simple concept was enough to catapult Shellco onto the steps of the giants. The best, the biggest, the oldest and the most iconic of New York kitchens are among our clients. We are also proud of the one-man and one-woman operations that work out of matchbox kitchens and tirelessly put on the show.
